In a bowl, whisk together the eggs, milk, vanilla, sugar, cinnamon, and salt. Dip each slice of bread into the egg mixture for a few seconds on each side, letting it soak but not fall apart.
Melt 1 tablespoon of butter in a non-stick pan over medium heat. Place the soaked bread slices in the pan. Cook for 2–3 minutes per side until golden brown, crispy on the outside, and fluffy inside.
Serve warm with a knob of butter on top (it will melt nicely) and honey. Alternatively, top with maple syrup, carob syrup, powdered sugar, fresh fruit, nuts, or grated chocolate.
